Preheat the oven to 180°C and place 12 cupcake cases in a cupcake tray
With an electric mixer, beat the sugar and butter on high speed until fluffy and light. Reduce the speed to medium and add the lemon juice, zest, gin and milk. Steadily add the beaten eggs and continue to mix for another couple of minutes.
Using a rubber spatula, gently incorporate the sifted flour, baking powder and salt until the mixture is just combined.
Divide the mixture between the cupcake cases and bake for 15-20 minutes – or until lightly golden.
Remove from the oven and leave to cool completely.
Combine the lemon frosting and gin into a bowl and whisk until creamy, then add the green gel food colouring.
Pipe in a swirl motion using a star nozzle onto the cooled cupcakes to create a tree shape.
Carefully place Popping Candy Sprinkles to the frosting to look like baubles.
Add a star from the Winter Wonderland Sprinkles to top the tree.
