To make the muffin:
  1. Preheat the oven to 180C (160C fan oven).
  2. Line a muffin tray with 12 muffin cases.
  3. Empty the chocolate millionaires cake mix into a mixing bowl. Add the water, oil and eggs. Using a whisk, mix to make a smooth creamy batter.
  4. Use a metal spoon to divide the cake mix between the 12 muffin cases.
  5. Put the tin in the hot oven and bake for 25 minutes, until cooked through.
  6. Leave to cool on a wire rack.

To make the chocolate ganache filling:
  1. Break the chocolate into small pieces and place in a heat-proof bowl.
  2. Place the double cream in a saucepan and bring to the boil, stirring occasionally. Once boiling, remove from the heat and pour over the broken chocolate.
  3. Whisk until smooth then leave to cool.

​To assemble the muffins:
  1. Use a small, sharp knife to cut a circular hole in the centre of the muffin. Angle the tip of the knife to the centre of the sponge, this will make it easier to remove the piece of sponge.
  2. Once you have cut the circle, carefully pull out the centre of the sponge. The hole left should be about three quarters of the way down the muffin. 
  3. Using a teaspoon, spoon some ganache filling into the hole.
  4. Trim the piece of sponge you cut away to create a lid and replace this on top of the ganache filling.
  5. Repeat until all 12 muffins are filled.
