For the cookies:
  • 140g unsalted butter, room temperature
  • 100g white caster sugar
  • 150g light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 250g self-raising flour
  • 1/2 tsp salt
  • 1x Cake Angels Salted Caramel & Brownie Fudge Posh Toppers
For the decoration:
  • 200g milk chocolate
  • Cake Angels Zillionaire sprinkles
Prep time: 20 minutes
Bake time: 10 minutes
Serving: 14-15

  1. Preheat the oven to 180°C (fan). Line a large baking tray with greaseproof paper.
  2. Beat the butter and two sugars together until light and fluffy.
  3. Mix in the egg and vanilla extract.
  4. Fold in the self-raising flour and salt until the mixture comes together into a cookie dough.
  5. Fold the Posh Topper chunks into the dough.
  6. Roll the dough into small balls and place on the baking tray (you should get 14-15 cookies in total). Leave plenty of space between each cookie so they have enough room to spread out.
  7. Bake for 10 minutes until lightly golden but still soft and pale in the middle.
  8. Leave the cookies to cool on the baking tray for 30 minutes.  
  9. Break up the milk chocolate and place in a bowl. Melt in the microwave until smooth, roughly 40-60 seconds.
  10. Dunk the cookies in the melted chocolate and decorate with Zillionaire Sprinkles.
